Ingredients
1/4 cup butter
1/4 cup flaked coconut
2 tablespoons curry powder
1 cup Flour
2 cups liquid (broth or milk)
Chutney
1/2 cup peanuts
1/2 cup pineapple chunks
1 cup uncooked rice
Salt to taste
1 tomato, wedged
2 cups cooked, diced turkey or chicken
Instructions
Cook rice. Prepare white sauce from fat, flour, milk and seasonings.
Add chicken and heat to serving temperature.
Pour curried chicken over rice.
Place pineapple, tomato wedges, peanuts and coconut on curried chicken and top with chutney. Four servings.
