Pumpkin Donuts Receipe - Eating Love

Dough Mix 1 (Poolish)
150 grams Coconut Milk
125 grams All Purpose Flour
22 grams Dry Active Yeast
Dough Mix 2
780 grams All Purpose Flour
100 grams Sugar
212 grams Pumpkin puree
200 grams Canned Coconut Milk
180 grams Grapeseed Oil
100 grams Water
Dough Mix 3 (Salt)
20 grams Salt
Frosting Base
750 grams Confectioners Sugar
60 grams Maple Syrup
6 ounces Coconut Milk
1 pinch Salt
Frosting Spices
2 teaspoons Ground Ginger
2 teaspoons Cinnamon
0.5 teaspoons Nutmeg
0.5 teaspoons Allspice
Frosting Toppings
To Taste Maple Pecan Donuts: Roasted Pecan Pieces
To Taste Pumpkin Spice Donuts: Roasted Pumpkin Seeds
To Taste Apple Cider Spice: Dried Apple Slices
Instructions
Warm milk mix to approximately 105 degrees, ingres poolish together and let rest in a warm spot for 25 minutes.
Add Dough Mix 2 ingredients to the mixing bowl.
When the 25 minutes is up, add poolish into the dough batter. Then mix in the mixer with the dough hook attachment for 25 minutes.
After 25 minutes is up add salt, then mix for another 5 minutes.
Let the dough rise to double the size after mixing. Dough may need to sit over night in order to rise sufficiently.
Roll the dough to 2 centimeters (approximately 3/4 inch). Then cut donut shapes... excess dough may be re-rolled for more donuts, or may be used to make Apple Fritters.
Bake at 350 degrees for 8 minutes.
After donuts cool, then generously apply frosting and toppings.

About Auset
Auset is a New York City native, currently residing in Oakland, California. She has worked in the food services industry for over 15 years. Her training began learning vegetarian and vegan cuisine, working as a cook at a not-for-profit yoga and meditation retreat site in Upstate New York, and India for a few years. After her time there, she attended and graduated from the Culinary Institute of America in Hyde Park, New York and studied Culinary Arts. Shortly after, Auset traveled through Italy and France WWOOFing (World Wide Opportunities on Organic Farm) on organic farms and Bed and Breakfast's, learning authentic French and Italian cuisine.
Upon returning back home to New York City, Auset started working as a Private Chef and became a certified Health Coach from the Institute of Integrative Nutrition. At tis time she also transitioned from working as a line cook to a pastry cook. As a Private Chef, she cooked for people with dietary restrictions and special dietary needs with the intention to support people in healing themselves through food and maintaining a healthy lifestyle.
Auset has worked and staged in fine dining and Michelin Star in New York, LA and Paris such as Restaurant Daniel, Trois Mic and Le Chateaubriand. Auset has always loved baking, but due to her own health issues, over time, it was not possible to continue eating baked goods with refined sugar, wheat, gluten, dairy and these items not affect her health. She has always been interested in making gluten-free, vegan and refined sugar-free desserts and her restaurant experience in pastry allowed her to develop the skills to create her own recipes and create desserts that she would want to eat.
It is very rare to have a gluten-free dessert that is also refined sugar-free, and vegan. Or a vegan dessert that isn't loaded with sugar and also gluten-free. This is how the idea of Eating Love came to be. Creating desserts that are healthy, vegan, gluten-free, refined sugar-free, and low in calories, so no one gets left out!
